Eggs and Sausage To Go

I'm a breakfast skipper. I've been trying to fix that without going to bagels, muffins, and all the other yummy morning breads. I found this recipe for Eggs and sausage to go: http://www.marksdailyapple.com/sausage-and-eggs-to-go/#axzz42PZZuH1W.
It's super simple and something I can grab on my way out the door.

Looks good CatMom! Diffidently low carb (double checking the sausage you use) almost 0. I'll have to give it a try. Looks like something that might freeze well.

These look really good Catmom. .  I have a favorite where I whisk 8 eggs with cheese, salt and pepper, pour into a muffin pan where each cup has been lined with non-stick spray and spinach leaves.  Bake for 15 min. and you have instant breakfast for several days.  Yummy!!

This looks really easy to fix and the end-product is good to look at (I am not sure how many of those I'd eat at a go). Just to digress a bit, how often should we eat eggs and/or egg products? There are a lot of versions out there and I'm sure a lot of it is inaccurate.
